Named for their visual resemblance to caviar, black lentils are small, round, shiny, and keep their shape when cooked. They're great for soups and salads, and look stunning as a garnish. (think of shiny little black dots over a colourful salad...) They cook in 20 min without soaking, and have a slightly nutty flavour. Black lentils are high in fibre and protien, as well as antioxidants found in dark-coloured foods.
