NOTE: We do NOT add synthetic man-made folic acid to our organic wheat flour or any of our flours - there is enough folic acid naturally occurring in the vitamin B9 in the bran and germ in the wheat grain that is retained in the flour. The NZ mandate does not include organic flour!
Is Wheat good for you?
At Organic Flour Mills we choose only organic New Zealand-grown wheat, certified BioGro. It has not been sprayed or heat treated, so it's good for sprouting. We have been to the farm where it is grown in the South Island, NZ, and can vouch for it ourselves :)
Store all grain in a COOL place - preferably in fridge or freezer.
(This will prevent any possible weevil infestation!)
Wheat is a complex carbohydrate, which means it takes longer to digest, enabling energy to be released slowly, without spiking the blood sugar. Wheat is a very popular grain (also known as wheat seed, kernels, groats, or berries) that can be sprouted, or wheat can be cooked and eaten like rice in savoury or sweet dishes. We mill our wheat grain into flour, but we never add any synthetic man-made folic acid to it.Â
So what exactly is Wheat?
Wheat’s botanical name is Triticum aestivum. Like all whole grains, the wheat kernel has 3 parts: the outer bran, the inner germ, and the endosperm layer between the bran and germ. Whole wheat contains all 3 parts of the grain, which are retained in the milled flour, unlike so-called "wholemeal" flour, which has the wheat bran and wheat germ stripped away, and a percentage of bran added back in. The white or so-called "wholemeal" flour you buy is the supermarket is a carb that's mainly just starch, which turns to sugar when digested. Whereas our wheat is a complex carbohydrate.
